Thakali ethnic group in Nepal’s Mustang District originates from the Thak Khola valley. The ingredients of Thakali Meal are Buckwheat, Barley, Millet, Rice, Maize, and Dal that are farmed nearby. The dried, crushed leaves of Buckwheat are also used to make a type of Dal. There are also additional unique Pickles, Ghee, and Gundruk. These foods are all included in the Thakali Meal as a whole.

The staples of Thakali cuisine are Lentils, Rice, and Vegetables (Dal-Bhat-Tharkari), plus Masu (Meat) for Non-Vegetarians. However, contemporary Thakali eateries also serve Thukpa (Noodle Soup) and Mo-Mos (Meat Dumplings) As an Appetizer, Basic Curry and Buckwheat finger chips (Kachhyamba) may occasionally be served with Buckwheat Breads (such as Chapatis or Pancakes). Desserts include Phopké or sweet curd (fermented rice).

An ordinary Thakali Meal consists of:

  • Timur (Zanthoxylum alatum)
  • Spicy Fried Potatoes (Tareko Aalu)
  • Spinach (Saag)
  • Meat (Masu) Chicken, or Goat (matan = ‘Mutton’ on the Menu)
  • Dessert Fermented Rice (Phopké)
  • Condiments: Hot Chili Pepper & Timur (Chap)
  • Radish Pickles (Mula ko Achhar)
